Classic Berry Baked Oats

Ingredients

  • 50g oats
  • 50g plain or vanilla yogurt (soy-based)
  • 50g any berries
  • 1 tsp baking powder
  • 1 tbsp sweetener (stevia)
  • 3 tbsp hot water

Preparation

  1. Preheat the oven to 180°C/350°F/gas mark 4.

  2. In a bowl, combine hot water and oats, stirring until slightly thickened.

  3. Add all the other ingredients and mix well.

  4. Pour the mixture into a shallow oven-proof dish lined with baking parchment/paper.

  5. Bake for 25 minutes. If doubling or tripling the ingredients, cook for an additional 10-15 minutes.

  6. Serve with extra yogurt or cream for a dessert option.
