Classic Berry Baked Oats
Ingredients
- 50g oats
- 50g plain or vanilla yogurt (soy-based)
- 50g any berries
- 1 tsp baking powder
- 1 tbsp sweetener (stevia)
- 3 tbsp hot water
Preparation
Preheat the oven to 180°C/350°F/gas mark 4.
In a bowl, combine hot water and oats, stirring until slightly thickened.
Add all the other ingredients and mix well.
Pour the mixture into a shallow oven-proof dish lined with baking parchment/paper.
Bake for 25 minutes. If doubling or tripling the ingredients, cook for an additional 10-15 minutes.
Serve with extra yogurt or cream for a dessert option.
