Colorful Beet-Marinated Deviled Eggs
Ingredients
- 10 eggs
- 1 large jar of grated or sliced red beets
- 200 ml beet juice
- 200 g mayonnaise
- Salt
- Pepper

- Avocado
- Horseradish
- Radishes
- Edible flowers
- Microgreens
Preparation
Hard boil the eggs, shock in cold water, and let them cool.
Carefully peel the eggs and spread a little of the red beets on the bottom of a clean jar.
Layer the eggs alternately with the red beets in the jar.
Fill with the liquid from the jar and beet juice, and seal well.
Let the eggs stand for one night, turning occasionally.
Remove the eggs from the brine, dry them, and halve.
Scoop out the yolks with a teaspoon and puree them creamy with mayonnaise. Season to taste with salt and pepper.
Put the mixture into a piping bag with a small nozzle.
Fill the egg halves evenly and decorate with the remaining ingredients.
