Easy Vegan Chocolate Protein Brownies
Ingredients
- 1 can chickpeas, drained and rinsed
- 1/2 cup unsweetened smooth peanut butter
- 1/4 cup maple syrup
- 1 tbsp olive oil
- 1/3 cup almond or oat milk
- 1 tbsp vanilla extract
- 1/2 cup Garden of Life vanilla protein powder
- 1/4 cup unsweetened cacao powder
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp chocolate chips of your choice - optional
- 1 tbsp walnut pieces - optional
Preparation
Preheat oven to 180C. Line a square brownie pan with non stick paper. (I used a 9 inch pan)
Put all the ingredients apart from the walnuts and chocolate chips in a blender or food processor. Blend till smooth. Make sure you scrape down the sides and blend it well. It will be very thick and gooey
Scrape out the mixture using a spatula and put into your lined baking tray. Gently press the mixture down so it goes into the corners
Sprinkle with the walnuts and chocolate chips if using
Bake for 20 minutes to 22 minutes. It’s done when the top is firm to the touch.
Let it cool slightly, cut into 9 squares and enjoy.
