Summer Strawberry Peach Bars
Ingredients
- 1 cup all-purpose flour {i used @bobsredmill gluten free 1:1 baking flour}
- 1/2 cup coconut sugar
- 1/2 tsp. baking powder
- 1/2 cup almond milk
- 1/4 cup oil {I used olive oil}
- 1 egg
- 1/2 cup diced peaches {about 1 large peach}
- 1/4 cup mini chocolate chips
- strawberry yogurt for topping
Preparation
Preheat oven to 350F and spray or line an 8x8 baking dish.
In a large bowl, whisk together the flour, sugar, and baking powder.
In a small bowl, whisk together the almond milk, oil, and egg.
Pour the wet ingredients into the dry and stir until well combined, then stir in the peaches and chocolate chips.
Pour the batter into the 8x8 and bake for 23 minutes.
Notes
Top with strawberry yogurt and coconut for added flavor.
