Easy No-Bake Muesli Bars
Ingredients
- 3/4 cup nut/seed butter (tahini works well)
- 1/2 cup maple syrup or honey
- 2 1/2 cups muesli (such as Seven Sundays oat flavors)
- 1 tsp vanilla extract
- Pinch of salt
- 1/3 cup dark chocolate chips
Preparation
Melt the nut/seed butter with the sweetener in a saucepan and whisk until smooth.
Stir in the vanilla extract and salt.
In a large bowl, pour the wet ingredients over the muesli and stir until the muesli is evenly coated. (Optional: You can toast the muesli in the oven at 350°F for 7-9 minutes for extra flavor.)
Melt the dark chocolate chips.
Line an 8x8" baking dish with parchment paper. Pour the melted chocolate into the bottom of the dish and spread it evenly.
Freeze the chocolate layer for 5-10 minutes until hardened.
Top the chocolate layer with the muesli mixture, pressing it in firmly.
Refrigerate the dish for a minimum of 4 hours.
After chilling, slice the mixture into bars.
Store the leftovers in the refrigerator for up to a week.
