Gooey Caramel Apple Crisp Stuffed Baked Apples
Ingredients
- 2/3 cup One Degree Organics Sprouted Rolled Oats
- 1/4 cup maple syrup
- 2 tbsp tahini
- 3 tbsp flour
- 2 tbsp walnuts, chopped (sub sunflower seeds for nut-free)
- 1 tsp apple pie spice
- 1/4 tsp salt
- 4 Pink Lady Apples
- 1 lemon
- 1 tsp cornstarch
- 1/2 tsp apple pie spice
Preparation
Preheat your oven to 350°F (175°C).
In a small bowl, mix oats, flour, walnuts, apple pie spice, tahini, maple syrup, and salt.
Core the apples and cut 3 of them in half, then place them into a lined baking dish.
Dice the remaining apple into small pieces and place them in a small bowl.
Squeeze juice from half a lemon over the exposed flesh of the apple halves to prevent browning.
For the diced apple, add the juice from the remaining half of the lemon, cornstarch, and apple pie spice. Toss to coat.
Fill the apple halves with a spoonful of the diced apple mixture, then top with the apple crumble mixture.
Cover the baking dish with foil and bake in the oven for 20 minutes.
Remove the foil and continue to bake for an additional 20-30 minutes or until the apples are tender.
