Green Power Veggie Spread

Ingredients

  • 1 zucchini
  • 3 green paprikas
  • 1 tbsp maple syrup
  • Handful of cashew nuts
  • 4 tbsp oil
  • 3 garlic cloves
  • 2 tbsp lemon juice
  • 2 tsp cumin
  • Salt and pepper
  • Chilli flakes
  • 6 tbsp bread crumbs
  • Handful of parsley

Preparation

  1. Soak the cashew nuts in water for about 30 minutes.

  2. Preheat the oven to 200 degrees Celsius (two-sided heat).

  3. Chop the zucchini and paprika.

  4. Bake the chopped zucchini and paprika in the preheated oven for 30 minutes.

  5. Drain the water from the soaked cashew nuts.

  6. Chop the garlic and fry it in oil.

  7. In a blender or food processor, puree all the ingredients together, including the roasted zucchini and paprika, soaked cashew nuts, fried garlic, lemon juice, cumin, salt, pepper, chilli flakes, bread crumbs, and parsley.
