Sizzling Yee Mee Stir-Fry
Ingredients
- 5 cloves garlic
- 1 inch ginger sliced thickly
- 5 dried chili stalks (adjust for spiciness)
- 2 tablespoons cooking oil
- 1 tablespoon sesame oil
- chicken
- shiitake mushrooms
- 3 tablespoons oyster sauce
- 5 tablespoons sweet soy sauce
- black pepper
- 3 tablespoons soy sauce
- 5 tablespoons cornstarch mixed with water
- water as needed
- eggs
- choy sum or similar greens
- yee mee noodles
- chicken stock (optional)
Preparation
Slice or pound the tumis ingredients first (except dried chili) and sauté until fragrant
Add chicken and shiitake mushrooms that have been cut small
Then add oyster sauce, sweet soy sauce, soy sauce, and black pepper
Let it boil, then add water and cook until chicken is fully tender
Depending on the amount of sizzling dish, let it simmer until chicken is tender
Season with chicken stock if desired
Add cornstarch mixture and cook until thickened
Cook yee mee in the pan by scooping broth, adding noodles and greens, simmering, cracking an egg, adding more broth, and cooking until noodles are soft and egg is set
Serve and eat with chopped chili
