Turkish Kalburabastı Fried Pastry

Ingredients

  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup yogurt
  • 100 grams melted butter
  • 3 tablespoons semolina
  • 1 packet baking powder
  • 1 teaspoon vinegar
  • 2.5 to 3.5 cups flour, adjust for consistency

Syrup

  • 3 cups sugar
  • 3 cups water
  • 1 lemon slice

Preparation

  1. First, for the syrup, mix water and sugar and bring to a boil, then let it cool

  2. In a bowl, mix all ingredients except flour thoroughly

  3. Gradually add flour and mix until the dough reaches the right consistency

  4. Shape the dough into balls slightly larger than a walnut and form using a tool or by hand

  5. Fry the shaped dough at 185°C until golden brown

  6. Pour the cold syrup over the hot pastry and let it rest for at least 2 hours

Tips

  1. Adjust the flour based on the dough's consistency to make it easy to shape

  2. You can use hazelnuts or walnuts inside the pastry for added flavor
