Turkish Kalburabastı Fried Pastry
Ingredients
- 2 eggs
- 1/2 cup vegetable oil
- 1/2 cup yogurt
- 100 grams melted butter
- 3 tablespoons semolina
- 1 packet baking powder
- 1 teaspoon vinegar
- 2.5 to 3.5 cups flour, adjust for consistency
Syrup
- 3 cups sugar
- 3 cups water
- 1 lemon slice
Preparation
First, for the syrup, mix water and sugar and bring to a boil, then let it cool
In a bowl, mix all ingredients except flour thoroughly
Gradually add flour and mix until the dough reaches the right consistency
Shape the dough into balls slightly larger than a walnut and form using a tool or by hand
Fry the shaped dough at 185°C until golden brown
Pour the cold syrup over the hot pastry and let it rest for at least 2 hours
Tips
Adjust the flour based on the dough's consistency to make it easy to shape
You can use hazelnuts or walnuts inside the pastry for added flavor
