Baked Banana and Date Caramel Snack Jars
Ingredients
- 8 digestive biscuits or similar biscuits (wholegrain or sugar-free options)
- 1-2 ripe bananas
- 400-500ml soya quark or oatly Turkish yoghurt (or a mix of both)
- 1 tsp vanilla powder or 1 tbsp vanilla protein powder
- 1/8 tsp cardamom
Date caramel
- Approximately 200g fresh dates (or dried dates soaked in hot water for 5-10 minutes)
- 2-3 tbsp oat cream
- Pinch of sea salt
- 1/4 tsp cinnamon
Preparation
Blitz the cookies in a food processor until crumbles are formed.
Place the cookie crumbles in the bottom of 1-2 jars or glasses.
Mix the yoghurt with the cardamom and vanilla powder.
Add a few scoops of the yoghurt mixture on top of the cookie crumbles.
Add banana slices and some date caramel on top.
Repeat the layers once more, finishing with a layer of banana and cookie crumbles.
