Baked Banana and Date Caramel Snack Jars

Ingredients

  • 8 digestive biscuits or similar biscuits (wholegrain or sugar-free options)
  • 1-2 ripe bananas
  • 400-500ml soya quark or oatly Turkish yoghurt (or a mix of both)
  • 1 tsp vanilla powder or 1 tbsp vanilla protein powder
  • 1/8 tsp cardamom

Date caramel

  • Approximately 200g fresh dates (or dried dates soaked in hot water for 5-10 minutes)
  • 2-3 tbsp oat cream
  • Pinch of sea salt
  • 1/4 tsp cinnamon

Preparation

  1. Blitz the cookies in a food processor until crumbles are formed.

  2. Place the cookie crumbles in the bottom of 1-2 jars or glasses.

  3. Mix the yoghurt with the cardamom and vanilla powder.

  4. Add a few scoops of the yoghurt mixture on top of the cookie crumbles.

  5. Add banana slices and some date caramel on top.

  6. Repeat the layers once more, finishing with a layer of banana and cookie crumbles.

  7. Eat and enjoy!
