Cassava Getuk with Palm Sugar Coconut

Ingredients

  • 500 g cassava
  • 100 g palm sugar
  • 1 tablespoon granulated sugar
  • 60 ml water
  • A pinch of salt
  • 1/2 teaspoon vanilla
  • 1/2 grated mature coconut (peeled and steamed briefly)

Topping

  • 1/2 grated young coconut (peeled and steamed briefly)

Preparation

  1. Boil the palm sugar, granulated sugar, water, salt, and vanilla, then strain and set aside.

  2. Steam the peeled and washed cassava until fully cooked and soft.

  3. Mash the cassava with a pestle while it is still hot.

  4. Pour the sugar syrup and mature coconut into the cassava mixture and stir until even.

  5. Mold the mixture into a square pan lined with plastic.

  6. Cut into pieces and sprinkle with the grated young coconut.

Notes

  1. Serve with ginger drink for breakfast to enhance the flavor.
