No-Bake Caramel Bars with Nut Base

Ingredients

Nut base

  • 100g cashews
  • 20g coconut flakes
  • 4 tablespoons coconut oil
  • 80g oat flakes or oat flour
  • 1 tablespoon water

Filling

  • 2-3 tablespoons caramel sauce

Chocolate coating

  • 70g dark chocolate
  • 1 tablespoon coconut oil

Preparation

  1. Finely mix the oat flakes and cashews in a stand mixer.

  2. Then stir all the nut base ingredients together in a bowl.

  3. Line a rectangular container with aluminum foil or plastic wrap and press the mixture in to 0.5 cm thick.

  4. Spread the caramel sauce over the nut base, using about 2-3 tablespoons.

  5. Place the container with the nut base and caramel sauce in the freezer.

  6. Melt the chocolate in a double boiler and mix with 1 tablespoon coconut oil.

  7. Spread the chocolate mixture over the caramel sauce as the final layer.

  8. Freeze everything for at least 1 hour.

  9. Remove from the container and cut into bars.

Tips

  1. Serve cold for best results.
