Quick Vegan Stir Fry with Zucchini and Beans

Ingredients

  • some onion
  • mushroom
  • 2 teaspoons minced garlic
  • 1/2 teaspoon ginger powder
  • 2 teaspoons dried basil
  • zucchini
  • cannellini beans
  • 1 tablespoon soy sauce
  • fresh spinach
  • 2 teaspoons sriracha
  • 1 tablespoon maple syrup (optional)
  • squeeze of citrus (optional)

Preparation

  1. Sauté some onion and mushroom.

  2. Add 2 teaspoons minced garlic, 1/2 teaspoon ginger powder, 2 teaspoons dried basil, zucchini, and cannellini beans.

  3. Sauté until zucchini softens slightly.

  4. Add 1 tablespoon soy sauce, fresh spinach, and 2 teaspoons sriracha.

  5. Stir to combine and allow liquid to cook off.

  6. Remove from heat.

  7. Add 1 tablespoon maple syrup or a squeeze of citrus to lighten the dish.

  8. Adjust seasonings as desired.
