Quick Vegan Stir Fry with Zucchini and Beans
Ingredients
- some onion
- mushroom
- 2 teaspoons minced garlic
- 1/2 teaspoon ginger powder
- 2 teaspoons dried basil
- zucchini
- cannellini beans
- 1 tablespoon soy sauce
- fresh spinach
- 2 teaspoons sriracha
- 1 tablespoon maple syrup (optional)
- squeeze of citrus (optional)
Preparation
Sauté some onion and mushroom.
Add 2 teaspoons minced garlic, 1/2 teaspoon ginger powder, 2 teaspoons dried basil, zucchini, and cannellini beans.
Sauté until zucchini softens slightly.
Add 1 tablespoon soy sauce, fresh spinach, and 2 teaspoons sriracha.
Stir to combine and allow liquid to cook off.
Remove from heat.
Add 1 tablespoon maple syrup or a squeeze of citrus to lighten the dish.
Adjust seasonings as desired.
