Rice Pudding in Under 10 Minutes

Ingredients

  • 2 cups cooked jasmine rice
  • 1 tablespoon chia seeds
  • 1 cup unsweetened oat milk
  • 2 tablespoons maple syrup
  • 1/4 cup raisins
  • 1 teaspoon cinnamon (or more)
  • Pinch of salt

Preparation

  1. Mix together all ingredients except rice.

  2. Bring to a simmer.

  3. Turn off heat and add cooked rice.

  4. Stir and let sit for a minute covered.

  5. Serve.

Tips

  1. Double the rice when cooking and refrigerate half for later use as it improves after moisture evaporates.

  2. Jasmine rice is recommended for its fragrance and lower glycemic index.
