Savory Green Oat Waffles

Ingredients

  • 350 ml oat milk
  • 1 teaspoon vinegar
  • 200 g oats
  • 1 tablespoon pistachio or pumpkin seed paste
  • 4 tablespoons cornstarch
  • 4 teaspoons baking powder
  • Pinch of salt
  • Generous handful of fresh herbs, foraged greens, or green leafy vegetables

Preparation

  1. Mix the oat milk with vinegar and let it stand for a few minutes.

  2. Blend with the remaining ingredients until smooth batter.

  3. Pour into a hot waffle iron and bake for about 2.5 minutes.

Tips

  1. Top with hummus, olive oil, flaky salt, fresh herbs, and crunchy vegetables as desired.

  2. These waffles can be frozen for later use.
