Soft Zucchini Chocolate Cookies

Ingredients

  • 135g all-purpose flour
  • 60g sugar
  • 1 pinch salt
  • 115g pureed zucchini
  • 30g tahini (or other nut or seed butter or margarine)
  • 6g baking powder
  • 115g dark chocolate

Preparation

  1. Preheat the oven to 180°C.

  2. Finely blend the zucchini.

  3. In a bowl, mix flour, sugar, salt, and baking powder.

  4. Add the blended zucchini and mix.

  5. Add the tahini and mix.

  6. Incorporate the chopped dark chocolate.

  7. Using an ice cream scoop, form spaced-out mounds on the baking paper.

  8. Bake for 15-20 minutes.
