Soft Zucchini Chocolate Cookies
Ingredients
- 135g all-purpose flour
- 60g sugar
- 1 pinch salt
- 115g pureed zucchini
- 30g tahini (or other nut or seed butter or margarine)
- 6g baking powder
- 115g dark chocolate
Preparation
Preheat the oven to 180°C.
Finely blend the zucchini.
In a bowl, mix flour, sugar, salt, and baking powder.
Add the blended zucchini and mix.
Add the tahini and mix.
Incorporate the chopped dark chocolate.
Using an ice cream scoop, form spaced-out mounds on the baking paper.
Bake for 15-20 minutes.
