Sunday Sunshine Vegan Bowl

Ingredients

  • Courgette ribbons
  • Carrot ribbons
  • Mushrooms
  • Spring onion
  • Kale
  • Splash of water
  • Pinch of garlic salt
  • Black pepper
  • Nutritional yeast
  • Fresh rocket
  • Asparagus
  • Half of a pitta bread
  • Avocado
  • Meatless farm sausage
  • Vegan bacon
  • Vegan feta

Preparation

  1. Cook mushrooms, spring onion, and kale with a splash of water, a pinch of garlic salt, black pepper, and nutritional yeast until softened

  2. Pan-fry asparagus until crispy

  3. Pan-fry vegan sausage and vegan bacon until crispy

  4. Smash avocado and fill half of a pitta bread

  5. Prepare courgette and carrot ribbons for fresh addition

  6. Assemble all components in a bowl, including fresh rocket and vegan feta
