Vanilla Cauliflower Oats with Caramelized Banana

Ingredients

  • 1/2 cup soaked oats
  • 1/2 cup frozen cauliflower rice
  • 1/2 cup vanilla soy milk
  • 1/2 banana
  • frozen raspberries
  • maca almond butter
  • bee pollen
  • coconut oil (small amount)
  • ground cinnamon
  • vanilla syrup

Preparation

  1. Mix the soaked oats, frozen cauliflower rice, and vanilla soy milk together. Thaw or heat as desired.

  2. Caramelize the banana: Heat a pan with a small amount of coconut oil, add banana slices, sprinkle with ground cinnamon and vanilla syrup, and cook until caramelized.

  3. Assemble the dish by topping the oats mixture with caramelized banana, frozen raspberries, maca almond butter, and bee pollen.
