Beet Hummus Toasties with Fresh Toppings
Ingredients
- 2 15oz cans chickpeas, drained
- 1/3 cup beets (frozen then defrosted, roasted, or steamed)
- 2 cloves garlic
- 3 large spoonfuls tahini paste
- juice of 1 lemon
- 1/4 cup olive oil
- 1/2 tsp sea salt
- 1/2 tsp cumin powder
- a dash of red pepper powder
Fixings
- sourdough bread
- fresh arugula or sliced avocado
- salt and pepper
Preparation
Blend all hummus ingredients together until smooth.
Spread the hummus on sourdough bread.
Top with fresh arugula or sliced avocado.
Season with salt and pepper to taste.
Note: The hummus has strong flavor and requires minimal additions for great taste.
