Chai Chia Seed Overnight Pudding

Ingredients

  • 3 tbsp rolled oats
  • 3 tbsp pumpkin seeds
  • 2 tbsp chia seeds
  • 1 medjool date (or 2 smaller)
  • 1/2 tsp cinnamon, ground
  • 1/2 tsp cardamom, ground
  • 1 cup soy milk, unsweetened
  • Optional: frozen raspberries, tahini, cacao nibs for topping

Preparation

  1. Let it sit overnight or for a couple of hours in the fridge.
