Easy Carrot Cake with Crunchy Chocolate Glaze

Ingredients

  • 3 eggs
  • 3 medium carrots, chopped (250g)
  • 1 cup oil
  • 2 cups sugar
  • 2 cups all-purpose flour
  • a pinch of salt
  • 1 tablespoon baking powder

Glaze

  • 1 1/2 cups sugar
  • 1 1/2 cups cocoa powder
  • 2 tablespoons butter
  • 1/2 cup milk

Preparation

  1. Place eggs, chopped carrots, oil, and sugar in a blender

  2. Blend for about 3 minutes

  3. Pour the mixture into a bowl and add flour, baking powder, and salt

  4. Mix with a whisk until well combined

  5. Pour the batter into a greased and floured pan

  6. Bake in a preheated oven at 180Β°C for about 45 minutes

Glaze

  1. In a saucepan, combine sugar, cocoa powder, butter, and milk

  2. Cook over medium heat, stirring constantly, until it begins to boil

  3. Continue stirring until the mixture pulls away from the bottom of the pan

  4. Turn off the heat and spread the glaze over the cake

  5. Let the cake cool, then cut and serve

Tips

  1. Do not let the glaze cool in the pan as it may harden
