Homemade Crackers from Juice Pulp

Ingredients

  • 2 cups juice pulp
  • 1/4 cup quinoa flour
  • 2 tbsp ground flax
  • 1 tbsp chia seeds
  • 2 tbsp pumpkin seeds
  • 2 tbsp sunflower seeds
  • 2 tbsp nutritional yeast
  • 1 tsp dried herbs
  • 1 tsp sea salt
  • 1/4 - 1/2 cup water

Preparation

  1. Add all the ingredients into a bowl.

  2. Add just enough water to form a ball and the mix stays together.

  3. Place dough between two pieces of parchment paper and then roll out to your desired thickness. The thinner it is, the crisper it will get.

  4. Take the top piece of parchment off and with a knife or pizza cutter, mark the dough into cracker-size pieces. Sprinkle some sesame seeds on top.

  5. Bake in the oven for approximately 40 minutes at 180°C. This may vary based on the moisture of the cracker. You’ll be able to tell they are done when you press on them and they no longer give.

  6. Leave to cool to room temperature.

  7. Store in an airtight container.
