Marinated Tempeh Stir-Fry

Ingredients

  • 1-8 oz block tempeh
  • Neutral flavored oil (for frying)

Marinade

  • 5 tbsp rice vinegar
  • 1/3 cup tamari or soy sauce
  • 1.5 tsp toasted sesame oil
  • 2 tsp maple syrup
  • 0.75 tsp chili paste or sriracha

Sauce

  • 2 minced garlic cloves
  • 1 tbsp finely chopped ginger
  • 1 tsp toasted sesame oil
  • 2 tbsp rice vinegar
  • 1/4 cup soy sauce or tamari
  • 1 tbsp sriracha
  • 1 tsp maple syrup
  • 1/4 cup water
  • 1 tbsp cornstarch

Preparation

  1. Gently boil a 1-8 oz block of tempeh for about 4 minutes, then drain and let it cool.

  2. Mix the marinade ingredients and set aside.

  3. Cut the tempeh into thin rectangles or triangles and place in a flat dish, then soak in the marinade for 15 minutes.

  4. Meanwhile, prepare the sauce by mixing the sauce ingredients.

  5. Pan fry the marinated sliced tempeh in a little neutral flavored oil in a non-stick skillet until golden brown on both sides, about 3 minutes each side, then remove from skillet.

  6. Add the sauce to the skillet and mix while heating until it starts to thicken, then return the tempeh to the skillet and toss in the sauce to coat.

  7. Optionally, mix in some sautéed mushrooms.
