No-Bake Pumpkin Donut Holes with Chocolate Dip
Ingredients
- 1/2 cup nut butter (e.g., cashew butter)
- 1/4 cup + 1 tbsp coconut flour
- 3 tbsp pumpkin purée
- 1 tbsp vanilla protein (e.g., vanilla collagen)
- 1 tsp pumpkin spice
- 1 tsp cinnamon
- 1/4 cup maple syrup
- 1/2 cup chocolate chips
- 1 tbsp coconut oil
Preparation
Mix all the ingredients together in a bowl.
Form the mixture into balls using a cookie scoop and roll them into ball shapes.
Line a plate with parchment paper and place the balls on it to prevent sticking.
Freeze the balls for 1 hour.
Melt 1/2 cup chocolate chips with 1 tbsp coconut oil.
Dip the frozen balls in the melted chocolate.
Sprinkle with additional pumpkin pie spice.
Freeze again for another hour.
Store in the fridge or freezer.
