Quick and Easy Sticky Toffee Pudding

Ingredients

For the Sponge

  • 50g/2oz or 1/2 cup gf self-raising flour (or all-purpose + pinch of baking powder)
  • 2 tbsp coconut or brown sugar
  • 2 tbsp any milk
  • 1 tbsp margarine
  • 1 tbsp black treacle
  • 1 tsp baking powder

For the Sauce

  • 50g dates + splash of water
  • 1 tsp black treacle
  • 1 tsp margarine

Preparation

Make the Sponge

  1. In a large bowl, mix margarine, sugar, and treacle with a spoon until creamy.

  2. Add flour, milk, and baking powder, then mix again until creamy.

  3. Transfer the mixture into a cereal bowl and smooth the top with the back of a spoon.

Microwave the Sponge

  1. Microwave the bowl on high for 90 seconds. Leave it on the kitchen side.

Prepare the Sauce

  1. While the sponge is microwaving, put dates and a splash of water into a mug.

  2. Microwave the mug on high for 1 minute.

  3. Use a fork to mash the dates into a thick paste.

Make the Gooey Sauce

  1. Stir in margarine, treacle, and milk into the mashed dates, creating a gooey sauce.

Assemble

  1. Pour the sauce on top of the sponge.

  2. Serve the sticky toffee pudding with vanilla ice cream.
