Quick and Easy Sticky Toffee Pudding
Ingredients
For the Sponge
- 50g/2oz or 1/2 cup gf self-raising flour (or all-purpose + pinch of baking powder)
- 2 tbsp coconut or brown sugar
- 2 tbsp any milk
- 1 tbsp margarine
- 1 tbsp black treacle
- 1 tsp baking powder
For the Sauce
- 50g dates + splash of water
- 1 tsp black treacle
- 1 tsp margarine
Preparation
Make the Sponge
In a large bowl, mix margarine, sugar, and treacle with a spoon until creamy.
Add flour, milk, and baking powder, then mix again until creamy.
Transfer the mixture into a cereal bowl and smooth the top with the back of a spoon.
Microwave the Sponge
Microwave the bowl on high for 90 seconds. Leave it on the kitchen side.
Prepare the Sauce
While the sponge is microwaving, put dates and a splash of water into a mug.
Microwave the mug on high for 1 minute.
Use a fork to mash the dates into a thick paste.
Make the Gooey Sauce
Stir in margarine, treacle, and milk into the mashed dates, creating a gooey sauce.
Assemble
Pour the sauce on top of the sponge.
Serve the sticky toffee pudding with vanilla ice cream.
