Quick Cinnamon Sugar Baked Oats

Ingredients

  • 5 tbsp (40-50g) porridge oats, blended or unblended
  • 3 tbsp plain or vanilla yogurt or milk, plus extra yogurt to serve
  • 1/2 tsp cinnamon
  • 1 tsp sweetener or sugar
  • 1/3 tsp baking powder
  • Squeeze of lemon juice
  • Sprinkle of cinnamon and sugar for dusting

Preparation

  1. Put all the ingredients into a breakfast bowl and mix until foamy, ensuring that the oats are well combined from the bottom of the bowl. If using a blender, blend the oats to a powder for a few seconds to achieve a more cake-like texture. Clean the rim of the bowl with your finger.

  2. Microwave the mixture on high for 90 seconds or transfer it into a lined oven-proof dish and bake in the oven for 15 minutes at 180°C (350°F) or gas mark 4.

  3. Tip the baked oats out onto a plate, top with extra yogurt and cinnamon sugar, and enjoy immediately. It is best eaten right away.
