Spinach Cheese Loaf Breakfast

Ingredients

  • 4 eggs
  • 200 g yoghurt
  • 200 g frozen spinach
  • 150 g oil or melted butter
  • 200 g yellow cheese (or mozzarella), grated
  • 200 g white cheese (or Feta), crumbled
  • 15 g baking powder
  • 400 g all-purpose flour

Preparation

  1. Beat the eggs in a large bowl.

  2. Blend the yoghurt and frozen spinach until well combined.

  3. Add the spinach mixture to the beaten eggs.

  4. Add the oil or melted butter and mix well.

  5. Grate the yellow cheese or mozzarella and crumble the white cheese or Feta. Add both to the wet mixture.

  6. Add the flour and baking powder to the mixture.

  7. Mix well until all ingredients are combined.

  8. Transfer the mixture to a non-stick loaf pan.

  9. Bake at 180°C until a wooden stick comes out clean when poked.

  10. Allow the loaf to cool down before serving.
