Sunshine Frittata Cups

Ingredients

  • 1/4 cup nutritional yeast, optional
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • 1 tsp dried basil/oregano
  • 2 1/4 cups water
  • 1 cup corn (frozen, fresh, or canned)
  • 1 large tomato, diced
  • 1/2 cup frozen peas
  • handful of baby kale or spinach, roughly chopped

Preparation

  1. Preheat the oven to 180c

  2. In a large bowl, mix together the flour, baking powder, nutritional yeast and herbs. Add the water and whisk until you have a smooth batter. Add the veggies and give it another mix

  3. Fill a greased muffin tin with the mix, ensuring an even spread of the veggies

  4. Bake in the oven for 30-35 mins until a toothpick comes out clean

  5. Leave to cool before turning out
