Sunshine Frittata Cups
Ingredients
- 1/4 cup nutritional yeast, optional
- 1 tsp baking powder
- 1 tsp garlic powder
- 1 tsp dried basil/oregano
- 2 1/4 cups water
- 1 cup corn (frozen, fresh, or canned)
- 1 large tomato, diced
- 1/2 cup frozen peas
- handful of baby kale or spinach, roughly chopped
Preparation
Preheat the oven to 180c
In a large bowl, mix together the flour, baking powder, nutritional yeast and herbs. Add the water and whisk until you have a smooth batter. Add the veggies and give it another mix
Fill a greased muffin tin with the mix, ensuring an even spread of the veggies
Bake in the oven for 30-35 mins until a toothpick comes out clean
Leave to cool before turning out
