Superfood Chocolate Energy Bars

Ingredients

  • 1 cup smooth natural peanut butter
  • 1/4 cup cacao powder
  • 1/2 cup dates
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 cup roasted almonds, roughly chopped
  • 1/2 cup pistachios, roughly chopped
  • 1/2 cup pepitas
  • 1 3/4 cups puffed quinoa
  • 85% dark chocolate

Preparation

  1. Place the first four ingredients in a food processor.

  2. Blend until the mixture forms a smooth ball.

  3. Transfer the mixture to a large mixing bowl.

  4. Add the dry fruits and puffed quinoa to the mix and combine with your hands until they stick together.

  5. Line a baking tray (18cm x 30cm) with parchment paper.

  6. Press the mixture onto the tray.

  7. Melt the dark chocolate and then pour it over the nutty mixture.

  8. Place the tray in the fridge to set overnight.
