Superfood Chocolate Energy Bars
Ingredients
- 1 cup smooth natural peanut butter
- 1/4 cup cacao powder
- 1/2 cup dates
- 1/4 cup maple syrup
- 1/2 tsp vanilla extract
- 1/2 cup roasted almonds, roughly chopped
- 1/2 cup pistachios, roughly chopped
- 1/2 cup pepitas
- 1 3/4 cups puffed quinoa
- 85% dark chocolate
Preparation
Place the first four ingredients in a food processor.
Blend until the mixture forms a smooth ball.
Transfer the mixture to a large mixing bowl.
Add the dry fruits and puffed quinoa to the mix and combine with your hands until they stick together.
Line a baking tray (18cm x 30cm) with parchment paper.
Press the mixture onto the tray.
Melt the dark chocolate and then pour it over the nutty mixture.
Place the tray in the fridge to set overnight.
