Tahini Salted Caramel Oatmeal with Caramelized Bananas
Ingredients
- 1 cup rolled oats
- 1 1/2 cups plant milk, plus more if it’s thick
- Pinch of sea salt
- 1 1/2 teaspoons ground cinnamon
- 5 Medjool dates, pitted and chopped
- 2 tablespoons tahini
- 1/2 teaspoon vanilla extract
- 1 large banana, sliced into 1/2 inch thick rounds
- 1-2 teaspoons coconut sugar or sugar of choice
- 1 teaspoon coconut oil
Preparation
Bring the milk to a boil in a small saucepan. Reduce the heat to a simmer and add the oats, salt, cinnamon, dates, tahini, and vanilla.
Cook for about 5 minutes, stirring occasionally, until thick and creamy.
Meanwhile, heat the coconut oil in a nonstick pan over medium-high heat. Sprinkle each slice of banana with a tiny bit of coconut sugar. Add the banana slices and fry for about 3 minutes, or until turning golden brown underneath and turning puffy. Flip and cook for 30-60 more seconds.
Top oatmeal with caramelized bananas.
