Vegan French Toast with Vanilla Berry Salad
Ingredients
- 1 cup/250 ml plant milk (for example almond or oat)
- 1 tbsp maple syrup
- 2 tbsp chia seeds
- 0.5 tsp vanilla (powder or extract)
- pinch of salt
- 6 large and thick slices of sourdough bread
- oil for frying (for example coconut)
Berry salad
- 2 cups/500 ml mixed berries (for example strawberries, blueberries, blackberries and pomegranate jewels)
- 1 tbsp maple syrup or agave
- 0.5 tsp vanilla (powder or extract)
Preparation
Blend plant milk, chia seeds, maple syrup, vanilla and salt in a blender for about 2 minutes until smooth. Pour into a wide dish.
Heat the frying pan to medium heat and add a drizzle of oil.
Dip both sides of each slice into the batter and fry on low-medium heat for 2-3 minutes on each side until golden brown. Flip gently.
While frying the toast, cut the berries into bite size pieces and put in a bowl. Stir in the maple syrup and vanilla.
Serve the warm toast with the vanilla berry salad. Use all the lovely maple vanilla berry juice which sits at the bottom of the berry bowl to drizzle over your toast and salad as a perfect sweet glace.
