Dill Hummus Cherry Tomato Bites

Ingredients

  • 10-15 cherry tomatoes
  • 1 can chickpeas, rinsed and drained
  • 1 lemon, juiced
  • 3 tbsp olive oil
  • 2 tbsp tahini
  • 2 tbsp fresh dill
  • 1 clove garlic, peeled
  • A pinch of salt & pepper

Preparation

  1. Slice tops off cherry tomatoes and scoop out the inside, reserving it.

  2. In a food processor, add the reserved tomato pulp, chickpeas, lemon juice, olive oil, tahini, dill, salt and pepper.

  3. Blend on high until smooth, adding a bit of water if needed.

  4. Fill each tomato with the dill hummus using a piping bag or a small spoon and enjoy.
