Dill Hummus Cherry Tomato Bites
Ingredients
- 10-15 cherry tomatoes
- 1 can chickpeas, rinsed and drained
- 1 lemon, juiced
- 3 tbsp olive oil
- 2 tbsp tahini
- 2 tbsp fresh dill
- 1 clove garlic, peeled
- A pinch of salt & pepper
Preparation
Slice tops off cherry tomatoes and scoop out the inside, reserving it.
In a food processor, add the reserved tomato pulp, chickpeas, lemon juice, olive oil, tahini, dill, salt and pepper.
Blend on high until smooth, adding a bit of water if needed.
Fill each tomato with the dill hummus using a piping bag or a small spoon and enjoy.
