Malaysian Sweet Potato Donuts with Sugar Coating

Ingredients

Dough

  • 1 kg white sweet potato
  • 1 cup wheat flour (approximate, add more if needed)
  • 1 teaspoon fine salt
  • 2 tablespoons cooking oil (for shaping)
  • Oil as needed for frying

Syrup

  • 1.5 tablespoons granulated sugar
  • 1 tablespoon water

Preparation

  1. Peel the sweet potatoes and cut them into small pieces.

  2. Boil with sufficient water and salt until soft.

  3. After softening, drain the water and immediately mash the sweet potatoes until smooth while still hot.

  4. Allow to cool slightly, then add flour little by little until the dough can be shaped into small rings and is not too sticky.

  5. Fry the dough rings in moderately hot oil until golden brown.

  6. Remove and drain the oil, then let cool for a moment before coating with sugar.

  7. For the sugar syrup, cook granulated sugar and water over medium heat until bubbly.

  8. After bubbling, reduce heat and add the fried dough rings, then stir evenly until sugar coats all the pieces.

  9. Turn off heat once the sugar is fully coated on all the dough rings.

  10. Serve the sweet potato donuts and they are ready to enjoy.

Tips

  1. When shaping the dough rings, use oil to make them form nicely and prevent the donuts from becoming hard.

  2. Avoid using flour during shaping as it can make the donuts hard.
