Brazilian Cassava Casserole with Dried Beef

Ingredients

  • 1 kg (2.2 lbs) cooked cassava
  • 1 (12-ounce) can heavy cream
  • 2 tablespoons margarine
  • 1/2 kg (1.1 lbs) dried beef, desalted and cooked
  • 1 medium onion, finely chopped
  • 4 garlic cloves, crushed
  • 2 tomatoes, peeled and chopped
  • salt and pepper to taste
  • grated Parmesan cheese (for topping)

Preparation

  1. Mash the hot cassava and transfer to a pan with margarine and salt, then add the heavy cream, mix, and set aside

  2. SautΓ© the onion and garlic in a drizzle of olive oil

  3. Add the shredded dried beef and let fry for a few minutes

  4. Add the tomatoes and cook until wilted, adjusting salt if necessary

  5. In an oiled baking dish, layer the cassava mash, dried beef, and remaining mash

  6. Sprinkle with grated Parmesan cheese and bake until golden
