Brazilian Rustic Bread Pudding
Ingredients
- 8 French bread rolls
- 3 cups milk
- 3 beaten eggs
- 1/2 tablespoon lemon zest
- 2 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1 can (14 oz) sweetened condensed milk
- 1/2 teaspoon ground cinnamon
Caramel sauce
- 2 cups sugar
- 1/2 cup water
Preparation
Soak the French bread rolls in milk for 1 hour or until softened
Mash the soaked bread with your hands
Add the beaten eggs, lemon zest, all-purpose flour, baking powder, and sweetened condensed milk
Mix until the ingredients are combined and a moist, firm dough forms. Set aside
For the caramel sauce, combine sugar and water in a saucepan. Stir and bring to a boil over low heat until caramel-colored, about 10 minutes. Do not stir during cooking
Pour the caramel sauce into a baking dish to caramelize the bottom and sides. Set aside
Place the dough into the caramelized baking dish
Bake in a preheated oven at 180Β°C for 40 minutes
Unmold the pudding while still warm
Serve immediately
