Brazilian Rustic Bread Pudding with Caramel
Ingredients
- 8 French bread rolls
- 3 cups milk
- 3 beaten eggs
- 1/2 tablespoon lemon zest
- 2 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1 can sweetened condensed milk
- 1/2 teaspoon ground cinnamon
Caramel sauce
- 2 cups sugar
- 1/2 cup water
Preparation
Soak the bread rolls in milk for 1 hour or until softened
Mash with hands
Add the beaten eggs, lemon zest, flour, baking powder, and sweetened condensed milk
Mix to combine the ingredients and obtain a moist and firm dough. Set aside
Caramel sauce
Place sugar and water in a saucepan, stir and bring to a boil over low heat until caramel-colored (about 10 minutes)
Do not stir anymore during cooking
Caramelize a baking dish with the sauce. Set aside
Baking and serving
Place the dough in the caramelized baking dish and bake in a preheated oven at 180Β°C for 40 minutes
Unmold the pudding while still warm
Serve immediately
