Grilled Picanha with Chili Crunch

Ingredients

  • 1 picanha
  • 1/2 sliced onion
  • 1 tablespoon ginger cut into julienne
  • 1 head sliced garlic
  • 1 cinnamon stick
  • 2 tablespoons chili flakes
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon balsamic vinegar

Preparation

  1. Score the fat of the picanha in a grid pattern, place in a good frying pan with the fat side down and turn on high heat.

  2. Control the heat so that the picanha grills for at least 15 minutes on each side. When well browned on both sides, remove to rest.

  3. Lower the heat, and in the same fat, add the cinnamon, onion, and ginger. Sauté until it starts to brown. Then add the garlic and fry until everything is golden and crispy. Remove and immediately pour over the chili flakes with the sesame seeds and balsamic. Stir well.

  4. Slice the picanha and enjoy with the sauce.
