Lemon Cake with Coconut-Lime Glaze

Ingredients

  • 3 eggs
  • 1/2 cup fresh lemon juice
  • 1/2 cup cold milk
  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon lemon zest

Glaze

  • 200ml coconut milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup fresh lemon juice
  • lemon zest (for decoration)

Preparation

  1. In a blender, blend the eggs, lemon juice, milk, oil, and sugar until smooth

  2. Transfer the mixture to a bowl and gradually mix in the flour, baking powder, and lemon zest

  3. Pour the batter into a greased and floured tube pan

  4. Bake in a preheated medium oven until the cake is golden

  5. Remove from the oven, let cool slightly, and unmold

Glaze

  1. In a blender, blend the coconut milk, sweetened condensed milk, and lemon juice until smooth

  2. Pour over the cake, decorate with lemon zest to taste, and serve
