Lemon Cake with Coconut-Lime Glaze
Ingredients
- 3 eggs
- 1/2 cup fresh lemon juice
- 1/2 cup cold milk
- 1 cup vegetable oil
- 2 cups sugar
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon lemon zest
Glaze
- 200ml coconut milk
- 1 can (14 oz) sweetened condensed milk
- 1 cup fresh lemon juice
- lemon zest (for decoration)
Preparation
In a blender, blend the eggs, lemon juice, milk, oil, and sugar until smooth
Transfer the mixture to a bowl and gradually mix in the flour, baking powder, and lemon zest
Pour the batter into a greased and floured tube pan
Bake in a preheated medium oven until the cake is golden
Remove from the oven, let cool slightly, and unmold
Glaze
In a blender, blend the coconut milk, sweetened condensed milk, and lemon juice until smooth
Pour over the cake, decorate with lemon zest to taste, and serve
