Fluffy Turkish Cheese Pastry

Ingredients

  • 1 cup vegetable oil
  • 1 cup warm milk
  • 2 eggs, separated (whites for dough, yolks for brushing)
  • 1 tablespoon dry yeast
  • 1 teaspoon baking powder
  • 1.5 cups yogurt
  • 2 tablespoons sugar
  • a pinch of salt
  • 5.5 to 6 cups flour

Filling

  • Cheese (amount as desired)

Preparation

  1. In a mixing bowl, add all ingredients except flour and mix.

  2. Gradually add flour and knead until a soft dough forms.

  3. Let the dough rest covered for 30 to 45 minutes.

  4. Without deflating, take mandarin-sized pieces, shape into balls, flatten slightly, add cheese, roll up, and place on a tray.

  5. Let rest covered for 30 minutes, then brush with egg yolk mixed with a little milk for shine.

  6. Optionally sprinkle with nigella seeds or sesame seeds.

  7. Bake in a preheated 200°C oven until golden brown.

Tips

  1. For better shine on the pastry, add 1 teaspoon milk to the egg yolk mixture.
