Fluffy Turkish Cheese Pastry
Ingredients
- 1 cup vegetable oil
- 1 cup warm milk
- 2 eggs, separated (whites for dough, yolks for brushing)
- 1 tablespoon dry yeast
- 1 teaspoon baking powder
- 1.5 cups yogurt
- 2 tablespoons sugar
- a pinch of salt
- 5.5 to 6 cups flour
Filling
- Cheese (amount as desired)
Preparation
In a mixing bowl, add all ingredients except flour and mix.
Gradually add flour and knead until a soft dough forms.
Let the dough rest covered for 30 to 45 minutes.
Without deflating, take mandarin-sized pieces, shape into balls, flatten slightly, add cheese, roll up, and place on a tray.
Let rest covered for 30 minutes, then brush with egg yolk mixed with a little milk for shine.
Optionally sprinkle with nigella seeds or sesame seeds.
Bake in a preheated 200°C oven until golden brown.
Tips
For better shine on the pastry, add 1 teaspoon milk to the egg yolk mixture.
