Chayote and Shrimp Stir-Fry

Ingredients

  • 250 grams chayote, cut into matchsticks
  • 1 tablespoon salt
  • 100 grams peeled shrimp
  • 65 ml thick coconut milk
  • 2 cm galangal, smashed
  • 150 ml water
  • 1/2 teaspoon ground pepper
  • 2 tablespoons oil for sauteing
  • stock powder to taste
  • sugar to taste
  • salt to taste

Spice paste

  • 6 shallots
  • 3 cloves garlic
  • 15 bird's eye chilies, to taste
  • 4 candlenuts
  • 1 red chili
  • 3 curly red chilies

Preparation

  1. Place chayote in a bowl, add salt and massage lightly to remove sap, let it sit until softened, wash thoroughly to remove salt, drain

  2. Heat oil, saute ground spices until fragrant, add galangal, shrimp, and chayote, stir briefly until mixed, add water, stock powder, pepper, sugar, and salt, stir briefly, let spices infuse, finally add thick coconut milk, let it boil while stirring, taste, and remove from heat

Tips

  1. This dish is a family favorite and pairs well with fried chicken, fried fish, shrimp crackers, corn fritters, or fried tempeh

  2. It tastes even better when made spicy
