Crispy Spicy Chicken Skin
Ingredients
- 150g chicken skin, cleaned
- 1 lime
- 2 cloves garlic
- 1 cup flour
- 1/4 cup tapioca flour
- 3 tbsp grated palm sugar
- 150ml water
- Salt
- Pepper
- Sugar
Spice mix
- 2 cloves garlic
- 5 shallots
- 1 piece ginger
- 10 red bird's eye chilies
- 5 red curly chilies
- 2 kaffir lime leaves
- Oil
Preparation
Cut the chicken skin to desired size and rub with lime juice, let it sit briefly.
Grind the garlic and mix with the chicken skin, add salt and pepper, and marinate briefly.
Mix flour, tapioca flour, pepper, and salt.
Coat the chicken skin with the flour mixture and fry until crispy.
Sauté the ground spice mix until fragrant.
Add palm sugar, water, salt, and sugar, and cook until slightly thickened.
Add the fried chicken skin and stir evenly.
Serve immediately.
Tips
Adjust spiciness based on chili availability and price.
Using less palm sugar may result in a lighter color but the dish will still taste good.
