Pounded Beef Dendeng with Green Chili

Ingredients

  • 250 g thinly sliced beef
  • 2 potatoes, peeled and cut into pieces
  • Water, as needed for boiling
  • Oil, as needed
  • Salt, as needed

Boiling spices

  • 4 cloves garlic
  • 1 tsp coriander
  • 1 thumb-sized piece of ginger
  • 2 tsp salt

Ground spices

  • 150 g green curly chilies
  • 3 large green chilies
  • 7 shallots
  • 2 small green tomatoes

Preparation

  1. Boil the meat with the spices for about 15 minutes, then drain and pound it. Set aside.

  2. Fry the potatoes until cooked, then drain.

  3. Fry the meat briefly (for dry dendeng, fry until crispy).

  4. Sauté the green chili spices, add salt as needed, and taste. Turn off the heat.

  5. Add the fried potatoes and meat, and serve.

Tips

  1. Sauté the green chili spices briefly to prevent them from turning black and losing color.
