Spicy Fried Chicken with Sambal

Ingredients

  • 1 whole chicken, cut into pieces

Chicken spice blend

  • 5 shallots
  • 5 cloves garlic
  • 5 cm turmeric
  • 1/2 teaspoon coriander
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 3 bay leaves
  • 3 kaffir lime leaves

Sambal

  • 10 shallots
  • A handful of red bird's eye chilies
  • A handful of green bird's eye chilies
  • A pinch of grilled shrimp paste
  • 1/2 teaspoon powdered stock
  • Salt to taste
  • 2 limes
  • Oil as needed

Preparation

  1. Wash the chicken until clean, then braise it with the spice blend until cooked and tender.

  2. Fry the braised chicken, remove it, and set aside.

  3. Fry the chilies and shallots until wilted, remove, and drain.

  4. Transfer the fried chilies and shallots to a mortar, add shrimp paste, stock powder, salt, and squeeze in lime juice, then grind to desired smoothness.

  5. After grinding, pour in about 5 tablespoons of hot oil from frying, and stir well.

  6. Place the fried chicken on a serving plate and pour the sambal over it.

  7. Serve with fresh vegetables and warm rice.
