Spicy Indonesian Beef Tongseng Stew
Ingredients
- 300 grams beef, boiled until tender and cut small
- 500 ml water
- 2 bay leaves
- 1 stalk lemongrass
- 1 kaffir lime leaf
- 1/2 tablespoon palm sugar
- 1 teaspoon salt to taste
- 3 tablespoons sweet soy sauce
- 1/2 tablespoon fried shallots
- 2 cabbage leaves, roughly chopped
- 1 green onion, roughly chopped
Spice paste
- 5 shallots
- 3 garlic cloves
- 3 candlenuts
- 1 cm ginger
- 1 cm turmeric
- 1/4 teaspoon peppercorns
Preparation
Sauté the spice paste until fragrant and cooked, then add the beef and stir well.
Add water and all other seasonings, cook until boiling and adjust taste.
Add fried shallots, cabbage, green onion, and whole red chili, cook briefly until flavors are absorbed and sauce reduces.
Serve warm.
