Authentic Brazilian Rolled Guava Paste Cake
Ingredients
- 6 eggs, separated
- 200 grams (1 3/4 cups) all-purpose flour
- 200 grams (1 packed cup) sugar
- 200 grams (1 cup) margarine
Filling
- 500 grams guava paste
- 1/2 cup water
Preparation
Beat egg whites until stiff peaks form (tip: add a pinch of salt)
Beat margarine and sugar until a white paste forms
Add egg yolks gradually
Add flour gradually
Fold in egg whites to obtain a smooth batter
Preheat oven to 250 degrees Celsius
Melt guava paste with water in a saucepan over low heat until smooth
Layer assembly
Grease and flour a 30x40 cm baking sheet
Spread a thin layer of batter on the baking sheet, as thin as possible, and bake for 5 to 7 minutes
Remove from oven, spread a thin layer of melted guava paste on the warm cake while still on the baking sheet, and roll tightly using a spatula to loosen from the bottom
Set aside the roll, clean the baking sheet, and repeat until all batter is used
Dust the roll with sugar
