Authentic Brazilian Rolled Guava Paste Cake

Ingredients

  • 6 eggs, separated
  • 200 grams (1 3/4 cups) all-purpose flour
  • 200 grams (1 packed cup) sugar
  • 200 grams (1 cup) margarine

Filling

  • 500 grams guava paste
  • 1/2 cup water

Preparation

  1. Beat egg whites until stiff peaks form (tip: add a pinch of salt)

  2. Beat margarine and sugar until a white paste forms

  3. Add egg yolks gradually

  4. Add flour gradually

  5. Fold in egg whites to obtain a smooth batter

  6. Preheat oven to 250 degrees Celsius

  7. Melt guava paste with water in a saucepan over low heat until smooth

Layer assembly

  1. Grease and flour a 30x40 cm baking sheet

  2. Spread a thin layer of batter on the baking sheet, as thin as possible, and bake for 5 to 7 minutes

  3. Remove from oven, spread a thin layer of melted guava paste on the warm cake while still on the baking sheet, and roll tightly using a spatula to loosen from the bottom

  4. Set aside the roll, clean the baking sheet, and repeat until all batter is used

  5. Dust the roll with sugar
