Delicious Vegetable Salad with Yogurt Sauce

Ingredients

  • 1/2 medium cabbage
  • 1/2 medium red cabbage
  • 1 medium carrot
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium green apple
  • 1 medium onion
  • 1 medium cucumber
  • 1 cup chopped broccoli
  • 1/4 cup halved walnuts
  • 1/4 cup sunflower seeds
  • 1/4 cup dried cranberries
  • 1/4 cup dried black raisins
  • 15 cherry tomatoes
  • 2 large boiled eggs

Sauce

  • 1 cup yogurt
  • 1 cup mayonnaise
  • 2 tablespoons mustard sauce
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Toast

  • 6 slices toast
  • 2 tablespoons olive oil
  • 2 cloves garlic, sliced

Preparation

  1. Chop the cabbage into very thin slices.

  2. Grate the carrot.

  3. Cut the bell pepper into small cubes.

  4. Cut the apple into small cubes.

  5. Slice the onion thinly.

  6. Cut the broccoli into small pieces.

  7. Halve the cherry tomatoes.

  8. Place all the prepared ingredients in a bowl.

  9. For the sauce, in a separate bowl combine yogurt, mayonnaise, mustard, lemon juice, olive oil, salt, and black pepper and mix until well blended then pour over the salad and toss to coat evenly.

  10. Transfer the salad to a serving dish.

  11. Arrange the boiled eggs on top, sliced or quartered as desired.

  12. Sprinkle the nuts and dried fruits over the salad.

Toast

  1. Brush the toast slices with olive oil, add garlic slices, and toast until golden and fragrant.

  2. Serve the toasted garlic bread alongside the salad.
