Vegan Tofu Feta Cheese

Ingredients

  • 500 g tofu
  • 150 ml boiling water
  • 150 ml white vinegar or apple cider vinegar
  • 1 tsp salt
  • 3 tbsp extra virgin olive oil
  • 1 tbsp Italian herbs
  • Zest and juice of 1 lemon
  • 1 tsp garlic powder or 1 clove fresh garlic

Preparation

  1. Tear the tofu into pieces or cut into cubes, then place it in a large pot or glass container.

  2. Add the boiling water, white vinegar, and salt, and mix well. Cover and refrigerate overnight.

  3. Just before removing the tofu from the refrigerator, prepare the marinade by mixing the olive oil, herbs, lemon zest, and juice in a small glass and add fresh garlic if using.

  4. Remove the tofu from the pot, place it in a bowl, add the marinade and garlic powder if using, and mix together. Refrigerate for another 2 hours.

  5. Use the feta in or with your favorite dishes.

Notes

  1. Did you know you can make a plant-based feta from tofu? Store-bought vegan feta is expensive, around €3.25 for 200g, but this method costs only €2 and makes double the amount.
