Delicious Healthy Vegan Pumpkin Blondies
Ingredients
- 1 can of chickpeas
- 1/3 cup of rolled oats
- 1/3 cup of pumpkin purée
- 1/3 cup of syrup (maple syrup or date paste/syrup)
- 1/4 cup of toasted coconut cashew butter (or any nut butter)
- 1/4 teaspoon of salt
- 3/4 teaspoon of baking powder
- 1 tablespoon of vanilla extract
- Cinnamon
- 1/8 teaspoon of baking soda
- Vegan chocolate chips
Preparation
Optionally remove the skin from the chickpeas.
Add all ingredients to a food processor and pulse until fully blended together.
Add vegan chocolate chips to the mixed batter and on top before baking.
Bake for 25 minutes at 350 degrees Fahrenheit.
