Delicious Healthy Vegan Pumpkin Blondies

Ingredients

  • 1 can of chickpeas
  • 1/3 cup of rolled oats
  • 1/3 cup of pumpkin purée
  • 1/3 cup of syrup (maple syrup or date paste/syrup)
  • 1/4 cup of toasted coconut cashew butter (or any nut butter)
  • 1/4 teaspoon of salt
  • 3/4 teaspoon of baking powder
  • 1 tablespoon of vanilla extract
  • Cinnamon
  • 1/8 teaspoon of baking soda
  • Vegan chocolate chips

Preparation

  1. Optionally remove the skin from the chickpeas.

  2. Add all ingredients to a food processor and pulse until fully blended together.

  3. Add vegan chocolate chips to the mixed batter and on top before baking.

  4. Bake for 25 minutes at 350 degrees Fahrenheit.
