Turkish Sesame Cheese Pastry

Ingredients

  • 1.5 cups warm milk
  • 1.5 cups warm water
  • 1 cup vegetable oil
  • 1.5 tablespoons yeast
  • 1 teaspoon mahlep (optional)
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 8 cups flour (adjust as needed)

Filling

  • Kasar cheese

Topping

  • Sesame seeds
  • 1 teaspoon molasses
  • 1/2 cup water

Preparation

  1. Place yeast and sugar in a kneading bowl.

  2. Add warm milk and water on top and wait for 5 minutes.

  3. Add the remaining ingredients, gradually incorporate flour, and knead into a soft dough for about 10 minutes.

  4. Let the dough rest for half an hour.

  5. Mix molasses and water.

  6. Apply a little oil to the shaping surface and hands.

  7. Divide the dough into pieces.

  8. Roll out each piece to the size of a tea saucer.

  9. Place kasar cheese in the middle and seal it.

  10. Dip in the molasses water and then in sesame seeds.

  11. Arrange on a tray.

  12. Let it rise for at least half an hour on the tray.

  13. Bake at 180-190 degrees Celsius.

Notes

  1. Store in closed containers or a refrigerator bag to keep fresh.
