Turkish Sesame Cheese Pastry
Ingredients
- 1.5 cups warm milk
- 1.5 cups warm water
- 1 cup vegetable oil
- 1.5 tablespoons yeast
- 1 teaspoon mahlep (optional)
- 2 tablespoons sugar
- 1 tablespoon salt
- 8 cups flour (adjust as needed)
Filling
- Kasar cheese
Topping
- Sesame seeds
- 1 teaspoon molasses
- 1/2 cup water
Preparation
Place yeast and sugar in a kneading bowl.
Add warm milk and water on top and wait for 5 minutes.
Add the remaining ingredients, gradually incorporate flour, and knead into a soft dough for about 10 minutes.
Let the dough rest for half an hour.
Mix molasses and water.
Apply a little oil to the shaping surface and hands.
Divide the dough into pieces.
Roll out each piece to the size of a tea saucer.
Place kasar cheese in the middle and seal it.
Dip in the molasses water and then in sesame seeds.
Arrange on a tray.
Let it rise for at least half an hour on the tray.
Bake at 180-190 degrees Celsius.

Store in closed containers or a refrigerator bag to keep fresh.
