Beetroot Hummus with Roasted Beets and Garlic

Ingredients

  • 5-6 small beets
  • 15 oz Can of Garbanzo Beans
  • 1 whole head garlic
  • 1/4 cup Extra Virgin Olive Oil
  • Juice of 2 Lemons
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Preparation

  1. Preheat oven to 400 F.

  2. Bake beets and garlic head in oven for about 1 hour or until tender.

  3. Peel off the skin of the beets and garlic once cooled.

  4. Blend all ingredients until smooth and creamy.

  5. Top with fresh herbs or seeds.

  6. Serve with gluten-free crackers or raw vegetables.
